I was helping my daughter cook for a project she was working on and we made blackened tempeh subs. It was the first time that I used my Hellmann’s vegan mayonnaise and the sandwich was awesome! I just fried the tempeh in a pan using a small amount of sesame oil. When the tempeh was cooked enough on both sides then I blackened it. I used smoked paprika, black pepper, chili powder and a little dash of cayenne pepper. Then flipped it to blacken the tempeh, spicing up the other side while the first side seared. After a minute or two I flipped it back to blacken the other side. I sliced this tempeh in half long ways before I cooked it, so one package was enough for two subs.
After putting the tempeh on the sub roll then it was time to build the sub!
I love onions and they are really good for you too! Red onions are my favorite and they are the healthiest onions, so when I make a sandwich I always add extra onions.
Tomatoes are also very healthy , so load up on them too!

The only thing I forgot was to add spinach, I didn’t remember until after I ate the sub. Don’t forget the spinach it is so healthy!
