This recipe came from the Ordinary Vegan Podcast. This soup tastes great, and is so healthy, and low in calories too. This broccoli soup recipe is so easy to make with only 8 ingredients. I left the salt out because my vegetable broth had plenty in it, and I never cook with salt anymore, I only add it to my plate if it needs it, and when my soup was done, it didn’t need any. Let’s take a look at how easy this recipe is.
The recipe calls for 1 pound of broccoli but next time I make this I will double it and just use the whole 2 pound bag. Frozen broccoli is very cheap and the soup is so good my wife and I finished it off in one sitting.
Here are the ingredients.
- 1lb of broccoli florets chopped
- 2 cups of Spinach leaves.
- 1/2 cup of vegetable broth for sautéing and it calls for 2-3 cups for the recipe. I used a total of 4 cups and that included the 1/2 cup for sautéing.
- 1 cup of unflavored non dairy milk, I used almond milk 30 calories per serving and I used 2 cups.
- 1/2 cup chopped onion, I used red onion.
- 3 tablespoons of fresh chopped basil, I just used basil spice out of the bottle not fresh and it was fine. I also used just 2 tablespoons cause 3 seemed like a lot, but after it was done 3 probably would have been fine.
- 1/4 teaspoon of black pepper.
- Garnish with scallions, shallots, or croutons.
Directions
- In a medium sauce pan heat one half cup of vegetable broth and add onions and sauté for 5 minutes.
- Add broccoli, pepper, and the rest of the vegetable broth. Bring to a boil and then lower heat and simmer for 7 minutes.
- Add the spinach and simmer for 3 minutes or until broccoli is fork tender.
- Add unflavored plant milk and let cool 10 minutes,
- In a blender, blend soup until smooth, add basil and pulse a few times.
- Return to pot and reheat and adjust consistency if necessary and garnish.
- I did the last 2 steps a little different. I turned my burner off and added the milk and let cool 10 minutes. Then I just added the basil and used my immersion blender and blended it right in the pot. It’s a time saver and the soup still tasted great. I highly recommend an immersion blender. I will add a picture of my immersion blender at the end of this post.
This soup is so good and packed with so much nutritional value that if your cells are even thinking about turning into cancer they will be beaten back into submission! Seriously, broccoli and spinach are super foods with many health and anti cancer benefits and red onion is no slouch either! I was shocked at how good this soup is and it was very filling too. Low calories make this a great food to help with weight loss and you will just feel better.
