Another great recipe from the Ordinary Vegan podcast, Creamy White Sauce, can be used for a Creamy Risotto, Mac and Cheese, or an Alfredo sauce which is what it actually tastes like. This recipe is easy to make, so let’s take a look at the ingredients.
- 2 cups of cashews, soak in 5 cups of water for at least 3 hours.
- 1 3/4 cups of vegetable broth with 1/2 cup for sautéing.
- 1 onion chopped
- 2 cloves of garlic chopped
- 1/2 cup of dry white wine
- 2 1/2 tablespoons of nutritional yeast
- a pinch of nutmeg
- a little black pepper
- a teaspoon of sea salt
- you can add more liquid at the end if you want a thinner consistency. I added 1/2 cup of non flavored 30 calorie almond milk.
Directions.
- Heat 1/2 cup of vegetable broth over medium heat, add onion and sauté til translucent.
- Add 2 cloves of garlic chopped, cook 2 minutes then remove from heat. Add more vegetable broth if garlic and onions are sticking to pot.
- Transfer into blender, add cashews, 1 1/4 cup of vegetable broth, 1/2 cup of dry white wine, a pinch of nutmeg, a little black pepper, and 1 teaspoon of sea salt.
- Blend smooth and add more liquid if you want a thinner consistency.
- You really have to blend it for a while. I blended it for about 3 minutes tried it and it was a little grainy. I added 1/2 cup of almond milk then blended again for 4 minutes straight and it was smooth.
- Add white sauce to pasta and add salt to taste. There you go a healthy Alfredo sauce that’s not going to kill you!!!
There you go an easy recipe, give it a try. A healthy plant based alternative to what is commonly called heart attack on a plate. Remember cashews are high in fat so I wouldn’t be eating it everyday but to mix into a plant based diet for some variety is perfectly fine. I will be testing out some more plant based cheese sauces soon, we will see which one is the best. Since cheese is the worst food known to mankind, and it is the one food people love the most. I must succeed in finding a plant based alternative to this poison, this known carcinogen, this food that is the root cause of many diseases that is absolutely killing millions and millions of humans.
