From the Ordinary Vegan podcast, Garbanzo Bean Soup is a hearty soup that tastes great and is easy to make. Garbanzo beans or chickpeas are packed with protein and fiber! Loaded with other nutrients too, chickpeas are an important food to incorporate into your daily diet.
This recipe is real easy to make, so give it a try and let me know how it went. Here are the ingredients.
- 2- 15 ounce cans of garbanzo beans drained and rinsed.
- 3-5 cups of vegetable broth plus 1/4 cup for sautéing. I used 5 cups total and added 2 cups water while cooking,
- 1 cup of orzo or any small pasta
- 1- 28 ounce can of low salt diced tomato or crushed tomato. I used crushed tomato.
- 4 garlic cloves chopped
- 3 shallots chopped, I used red onion.
- 2 tablespoons fresh chopped rosemary. I just used the bottle of spice not fresh.
- 1 teaspoon of thyme
- 1 teaspoon of dried basil
- 1 teaspoon of salt. I don’t cook with salt, I add it to my plate if it needs it.
- 1/4 teaspoon of crushed red pepper flakes.
- 1/4 teaspoon of black pepper.
Directions
- In a large soup pot heat 1/4 cup of broth and add shallots and garlic and sauté for 2-3 minutes or until soft.
- add seasonings, garbanzo beans, crushed tomato, orzo, and broth.
- cook about 10 minutes, taste and adjust the seasonings if necessary.
- serve with crunchy bread and something green. I just ate it with a multi grain piece of toast.
