I had Japanese carrots at Makotos and wanted to cook them at home. You can easily make this dish without butter and then it becomes a healthy vegan meal. I used a small amount of sesame oil instead of butter. Carrots are already sweet but the recipe has different options to sweeten it up more, and I chose maple syrup and 100% organic pure stevia. The recipe has several optional seasonings, and I used ginger. This gives the meal an awesome flavor. I also added black pepper to my plate not to the meal. The reason I do this is because I like it both ways, with and without black pepper. Adding the black pepper changes the taste but it is awesome either way you choose. I made a brown rice stir fry using no oil because I am trying to limit my fat intake. I used soy sauce instead, and added red onion, garlic, bok choy, and mushrooms. You can make yours however you want to, that’s the beauty of cooking, there is no right or wrong way! Experimenting with different flavors is fun and just like with adding the black pepper it almost makes it like two different meals. I always approach cooking like there are no rules so when you cook this recipe try different things and experiment too. I buy the 2 lb bag of baby carrots already peeled and ready to go. Raw carrots are cheaper but it’s worth the extra money to save the time and not have to peel or chop the carrots.
I still chop them but much easier to do after you boil them.
This is my stir fry first I added the mushrooms. Always use brown rice not white. White rice has no nutritional value. Brown rice has fiber and iron.
Red onions are the healthiest onions and the next time I make this recipe I am going to add scallions to my recipe too.
Then I added the bok choy, it looks like a lot but when it cooks it blends in nicely.
See what I mean? When I cook, I cook a lot and then I just put it in Tupperware and eat it throughout the week. This meal is not expensive to make at all.
