Healthy and Quick
This is my own recipe and is something that I started to eat early in my vegan journey. Oatmeal is fast and easy to make and is a very healthy meal. Usually eaten for breakfast, it can be eaten any time during the day or night. If you don’t feel like spending a lot of time cooking this is the perfect go to meal. You can make steel cut oats in advance but they take longer to cook, around 25-30 minutes, or you can make the instant oatmeal in the microwave that only takes 2 minutes. I make the instant unless I’m making oatmeal for a recipe like the vegan shepherds pie. In Florida we have Publix Supermarkets and I just buy their store brand instant oatmeal. I was buying a box of the regular oatmeal and a box of their maple brown sugar to add some sweetness to the meal. Thats right, one packet isn’t enough for me, I make 2 packets and it is just enough for my big appetite. Oatmeal is loaded with vitamins and minerals and has a decent amount of fiber and protein. Cooking it with 1 1/3 cups of almond milk adds plenty of calcium and vitamin E. Then I add 2 tablespoons of organic golden milled flax seed and 1 tablespoon of cinnamon after it comes out of the microwave. Once that is all mixed up real good, then I add the fruit. You can add whatever fruit or fruit combos that you want. I prefer 1 cup of blueberries and 1 banana or if I don’t have blueberries I just use 2 bananas. You can also add chia seeds if you want. You can just use the plain oatmeal if you want it to be sugar free and just add a little stevia to sweeten it up. I bought organic stevia from amazon. It’s not the fake stevia that has other ingredients and isn’t much better than any other artificial sweetener, it’s 100 percent pure organic stevia with just one ingredient, stevia. I will be doing a product review on this stevia from amazon and will post the link to it in that post. you can easily find it by searching amazon, I will be posting a picture of it below. This is a super healthy meal that doesn’t take a lot of time to prepare and can be the perfect start to your day. This meal has 40% of your vitamin A, 108% of calcium, 114% of iron, about 20% of your potassium, more if you put 2 bananas in it, over 100% of vitamin E, 45% vitamin C, 23.8 grams of fiber (most people have a hard time getting 15 grams daily), and about 12.5 grams of protein, all for about 482 calories or 462 calories if you just use 2 packets of the plain oatmeal and add a little stevia to sweeten it. You can also make your oatmeal the night before so there is really no excuse not to start your day off right.
