I am so glad I found this recipe. I am 53 years old and I have never heard of carrot soup before and never would have guessed that peanut butter would be one of the ingredients. Its called spicy carrot soup but I did not find it to be that spicy, and the second time I made it I put extra red curry paste. I’m not complaining, believe me, I love this soup, and you can easily spice it up the way you like with black pepper, red pepper, after it’s in your bowl. This soup is very versatile too. It’s so thick you can use it as a dip or like a gravy. This would be awesome over the shepherds pie recipe, or you can it eat by itself as soup or mix it with brown rice or whole wheat pasta. This time I made it, I substituted the coconut milk with almond milk and I notice no difference in the taste. I mentioned this before, coconut milk has a very high amount of saturated fat, higher than butter, so if you are trying to get healthy you probably should stay away from anything with coconut in it.
