With the Taquitos recipe I found this recipe for vegan sour cream. Made with cashews it’s a tasty compliment to the vegan Taquitos or Tacos. It’s easy to make in a blender or food processor and is a healthy vegan, dairy free option! It’s good to have some variety if you decide to go vegan, and this recipe can help with that. Dairy is absolutely the worst food you could possibly eat causing cancer, autoimmune disease, heart disease, Alzheimer’s, Dementia, Parkinson’s and type 2 diabetes! There are companies now making vegan cheese from soy and other plant milks like cashew milk and I highly recommend getting off dairy. Read the book by Dr. Neil Barnard, The Cheese Trap for all you need to know about how harmful dairy is.
Ingredients
- 2 cup cashews
- 1/2 cup lemon juice
- 2 cloves of garlic
- salt
- black pepper
Directions
- Soak 2 cups of cashews in 5 cups of water for at least 3 hours.
- Drain the cashews and put all ingredients in a food processor or blender and process until smooth. Season with salt and pepper.
See, it doesn’t get any easier than that, so give it a try. You can use this with the Taquitos recipe on my blog or tacos. You can also eat this with baked potato or sweet potato. I cook baked potato and sweet potato in bulk and then keep them in the fridge so I have something to eat that can be ready in a few minutes. They take about an hour to bake. I put them in the toaster oven at 450 degrees, no aluminum foil, and set the timer for 50 minutes. When the timer goes of I just turn the toaster oven off but I leave the potatoes in for another 15 minutes. It takes so long to cook them so you’ll want to bulk cook many at one time so they are readily available when you need them. Just 2 minutes in the microwave and they are delicious and healthy and the vegan sour cream would be the perfect compliment. Thank you for taking time out of your day to read my blog.
